Yes, this was delicious. Yes, this was easy. Yes, this is super packed with lot’s of nutrition AND flavor.
What you need:
1 cup of cooked Quinoa
Lean 90/10 ground beef or ground turkey
2-3 cups of cooked spinach
2 tbsp Dijon mustard
1 tbsp worcestershire sauce
1/2 tbsp Dried oregano
1/2 tbsp Fresh or dried basil
Roasted vegtable, asparagus, brussel sprouts, broccoli…(this goes on top of the delicious bowl)

First, assemble your meatballs. In a large bowl, add your beef, 2-3 cups of spinach, garlic, onion, dijon mustard, worcestershire, oregano, and basil. Roll them into balls and place on a baking sheet. Bake at 350 for 15-20min or until cooked through.
Next, once your meatballs are done, place meatballs on top of the quinoa, pour some marinara on top, place your roasted veggies and feta cheese on everything and EAT!
