This took all of 20 min, extremely flavorful and filling.
What you need:
1 chicken breast per person
Red bell pepper
1 can of artichoke hearts
Sun dried tomato, as many or as little as you want
1/4 cup of feta cheese
Sprinkle of parmesean cheese
Salt and pepper
First, sprinkle your chicken with olive oil, salt, pepper and oregano and bake at 325 until cooked through.
Next, in a cast iron skillet cut your asparagus in half, add your artichoke heart (drained and dried) and dice your bell pepper, sprinkle with olive oil and roast until half way cooked.
Once those veggies are half way cooked and the chicken is done cooking then add your chicken to the top of your roasted veggies, add 1/4 cup of kalmata olive, a few sundried tomato, feta cheese and sprinkle your parmesan cheese. Bake for another 4-7 min to allow everything to warm together.
