Pumpkin Bars

These are easy, healthy, gluten free and great for an on the go snack, lunch box filler or on the side with coffee. This is the time of year where I start to use alot of pumpkin puree, apple sauce and sweet potato puree in baking.

What you need:
1/2 cup of rolled oats
1/2 cup of pumpkin puree
1/2 cup of egg whites
1/2 cup of almond milk
2 tbsp of real maple syrup
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/8 tsp salt
1/2 cup of craisins

Preheat oven to 350, grease your baking pan. Mix all ingredients in a bowl, pour into your greased baking pan. Bake for 15-20 min or until it is cooked through and browned slightly on top.
