Take 2 Blow Your Socks off MUFFINS!

Okay, I’m human and we all make mistakes. This mistake was kind of a big one and I apologize. I left out the main ingredient in these amazing, nutritious and delicious blow your socks off muffins. ZUCCHINI, duh! That was the whole motivation to making these. Sneaking in veggies for those little one’s running around and maybe for you too. I am curious now what they would taste like without the main ingredient. I think I will try it and let you know…
In the mean time, enjoy making these and eating them. Even better with a little nut butter spread on top.


Guess what?! No butter, no added sugar, no oil! This gives the muffin a whole new name! Eat these for breakfast or an afternoon snack. Have a finicky eater? This is the best way to get whole grains, fiber, vegtables and fruit into your little one’s.

What you need:
1 and 1/2 cup of whole wheat flour
1/2 cup of white flour
2 tsp baking soda
2 tsp baking powder
1/4 cup of non-fat Greek yogurt
1/4 cup of orange juice
1/4 cup of maple syrup
1 egg
1 egg white
1/2 cup of mashed sweet potato
4 oz of apple sauce
1/2 cup of raisins
Pinch of salt
1/2 tsp vanilla

Mix all dry ingredients in a bowl, then add all of the wet ingredients and mix well, place into a muffin tin or a bread tin. Bake at 350 for 15-18 minutes or until you can stick a tooth pick through and it comes out clean.
