Stuffed Peppers

Probably one of the easiest dinners. You can stuff a pepper with just about anything. These peppers have all kinds of yummies stuffed and baked.

What you need:
Green or red bell pepper
Ground chicken or turkey or lean beef
1/2 cup Corn
1/2 cup Black beans
1 cup Spinach
1/2 cup of quinoa
Jalapeno jack cheese

First, cut peppers in half or cut the tops off and scoop the insides out. Turn oven onto 375 and sprinkle a little olive oil on the peppers and roast until peppers are slightly wrinkled. While the peppers are roasting, sautee the ground meat, corn, spinach, quinoa and black beans together.

Once your peppers are finished roasting, pull them out and stuff them. Place your cheese on top and stick them back into the oven until the cheese has melted.
