Yep, its FALL!! Squash, soups, and baking! This yummy dinner left us feeling more than satisfied, with all of the delicous flavors, and colors of Fall.
What you need:
1 cup of Cooked Quinoa
1/4 cup Dried Cranberries
1/4 cup Feta cheese
Chicken Sausage. We used feta and spinach stuffed chicken sausage.
Start by cutting your squash in half and scooping out the seeds. Lay face down on an oiled baking sheet and roast until you push on the shell and it is soft.
While those are roasting, squeeze the sausage from the casing and saute. Once the sausage is done cooking, add your quinoa, feta cheese and cranberries. you can turn the heat off at this point and just mix everything together.
Finally, once the squash is cooked, scoop your quinoa mixture into your squash and enjoy!
