3 Bean Veggie Soup

It’s cold and its gonna stay cold for awhile. Do yourself a solid and make a big pot of this soup and stay warm and healthy with it.

What you need:
3 sliced carrots
3 chopped celery
1 chopped sweet onion
1 cup of black beans
1 cup of white navy beans
1 cup of butter beans
1 bag of mixed greens, we used mustard, turnip and collard
1 cup of diced tomatoes
1/2 cup corn
4 cups of low sodium chicken or veggie broth
1 tbsp sabzi ash Middle Eastern spice. Its dried coriander, parsley, chives, spinach and dill. Ash means soup and sabzi is the blend of dried herbs, which is used to make soup. I use it in alot of my soups to add a nice flavor. My mom introduced me to sabzi and she is the QUEEN of soups!
1 tbsp oregano
pinch of salt and pepper
1 tbsp ketchup

Start with sweating your onion, carrot and celery. Next, add your spices and ketchup (ketchup adds a little sweetness). Next add your greens and cook them down, once they have cooked down and there is room in your pot add your broth, beans, corn and diced tomatoes. Bring to a boil and simmer until you are ready to eat or about 30 minutes.

Shave a little parmesean cheese on top and bundle up with your loved ones, enjoy!
