Thanksgiving Day Muffins


I made these muffins for Nolan’s classroom yesterday, they were easy, delicious and nutritious. Leave off the cream cheese frosting and have them for breakfast or keep the cream cheese frosting on and call it dessert!

What you need:
1 and 1/4 cup of whole wheat flour
3/4 cup of raw oats
2 and 1/2 cups of *homemade apple sauce
2 tsp of baking powder
1/4 tsp salt
1/4 cup low-fat milk
1 egg, beaten
2 tbsp of Non-fat greek yogurt
1/2 cup of raisins
2 mashed ripe bananas

In a bowl mix all dry ingredients. In another bowl mix all wet ingredients. Combine everything in one bowl and mix well. Bake at 400 for 20 minutes. Now because you are not using oil in the muffins, you will not want to use paper muffin cups. Grease your muffin tins with some kind of plant based oil, coconut oil is best.

*Homemade apple sauce
Peel and core 4 apples, I use fuji. Then, dice them into 1 inch cubes, cook your apples in a pot with 1/2 cup of water and 1 tbsp of cinnamon, place a lid on top and cook the apples until you can push a fork through them. You may need to add a little more water. Finally, drain the juice into a glass and PLEASE drink it, amazing!! Using a potato masher, mash your apples. Enjoy your YUMMY homemade applesauce!

      no, I cheated. I bought it already made. However if you mix confec. sugar and cream cheese, I use the nuefchatel cheese, then you have cream cheese frosting. Gotta blend it, I think its 1 container of cheese and 1 cup confec sugar…
