Easy, filling and delicious!
What you need:
1 Chicken breast per person
1 jar of marinara sauce
1/2 cup of whole wheat bread crumbs*
1-2 slice of provolone cheese per person
1 egg white
1 tbsp of oregano
First break your egg and place the white in a bowl. Next place your bread crumbs into another bowl along with your oregano, mix together. This part is fun, take your chicken breast and dip into the egg white and then roll into the bread crumbs and place on a baking sheet.
Next, bake at 325 until internal temp is 165, while the chicken is cooking dice your zucchini and cut your onion in slices. Saute these veggies in your cast iron or pan until cooked through.
*Frugal bread crumb trick, if you are like me you never eat the butt of your bread. Keep the butts, keep the random pieces of shredded wheat that landed on the bottom of your cereal box. Place them in a food processor and blend into bread crumbs, you now have whole wheat bread crumbs, store in your freezer. You are welcome!
