This is a fun breakfast for the kids and it gets all the little nutrients that they need, super healthy, filling and delicious!
What you need:
2 1/2 cups of whole wheat pastry or whole wheat all-purpose flour
2 tbsp brown sugar
2 tsp baking soda
1/2 tsp salt
2 cups of almond milk
1 banana smashed
1/2 cups of smashed cooked purple yams OR sweet potato.
In a bowl smash the banana and yams together, then mix the rest of the ingredients
Here is a little secret, when you are mixing the dry ingredients. Feel free to triple up and store in a glass jar so that you forever have pancake mix on reserve. Instead of buying that “prepackaged bull shit” -Thug Kitchen, 2013. Next time you go to make pancakes figure that 2 2/3 cup of dry mix to 2 cups of milk each time for 12 pancakes, for 6 pancakes measure out 1 1/3 dry to 1 cup of milk.
Then you have a whole lotta hotcakes! I always make like 12 and freeze the rest, who has time during the week to be Martha Stewart?
