Rainbow Burrito

My pictures are not the greatest but I have good reason. I was in the process of making these for dinner while my son decided to lock us out of my bedroom, with a very loud and confused barking dog on the other side of the door. With only 20 minutes before my FFIT group was to arrive and all of my tennis shoes in the bedroom room. I had to think fast, feed the kid and photograph this dinner. In between cooking, eating and scaling my bathroom wall in the cold rain, I managed to get these photos. This was a delicious, SUPER healthy, colorful and nutritious meal for all to enjoy!

What you need:

1 peeled and steamed purple yam
3 cut, peeled and steamed carrots
1 avocado
1 cup of pinto beans
whole wheat tortillas
Hot or medium fresh salsa

Start by steaming your yams and carrots:

Once these are steamed and ready, mash up your yams and line up the rainbow of yumminess:
