I’m back on my turmeric soap box. I call this Aloo Gobi, sort of. There are some missing Indian spices that I did not have. I used what I had and it was still delicious! The real Aloo Gobi recipe is at the bottom of this post.
What you need:
Chicken (real version would be potato)
1 1/2 tbsp Turmeric
1/2 tbsp Cumin
1 tsp Chili Powder
1/2 tbsp Cinnamon
1 tsp black pepper
Salt to taste
1/2 cup of chicken broth
1/2 cup of skim milk
First, wash and cut up your cauliflower and roast at 325 until cooked. Next, start dicing your onions and carrots into small cubes. Toss the onion and carrot into your pan and start sauteeing.
While the veggies are all cooking cube your chicken or potato (if vegetarian version) and add to your carrots and onion. Then add your spices, finally add your roasted cauliflower, peas, chicken broth and milk.
I made a combo of long grain brown rice and quinoa to place all of these goodies on top of.
Real Aloo Gobi:
