Nutritious and Delicious SOUP!



This soup hit the spot and it made tons, for easy lunches and quick dinners during the week.

What you need:

4 cups of chicken broth

2 cups of water

4 carrots chopped

1 cup of chopped onion

1 cup of chopped celery

4 cups of power greens (kale, spinach and swiss chard)

2 zucchini chopped

2 yellow squash chopped

1 skinned and chopped sweet potato

1 cup of black eyed peas

1 cup of lima beans

1tbsp of turmeric

1 tbsp of oregano

1/2 tbsp of sabzi spice

S&P to taste

Start with a little olive oil in your soup pot, add your chopped onion, celery and sliced carrots. Saute those until they browned slightly at the bottom of your pot. Add your spices, chicken broth and water, then add EVERYTHING else, squash and zuchini once the sweet potato is cooked.

BONUS DROP BISCUITS

This is a job for the kids, mom and dad take and chop into really small pieces 2 carrots, 1/2 of a zuchini and shred 1/4 cup of parmesean cheese. With a store bought biscuit mix, bake to the directions on back and have the kids add your carrots, zucchini  and cheese. Then have them drop onto and sheet and watch them bake. NOW this is how you get your kids to eat veggies!!
