The kids are home for spring break, running around and driving you crazy OR you are racing from spring break camp A and B to work and back. You need an easy dinner, something that perhaps the kids can help you with and that will save you loads of unnecessary calories.
This 5 ingredient dinner is fast, nutritious and delicious!
What you need:
Pre-cut butternut squash
2 broccoli heads
1 pound of ground turkey
1 box of penne whole wheat pasta
1/2 cut of feta cheese
S&P to taste along with oregano
Start with getting the kids into the kitchen to spread out the squash and broccoli on a cookie sheet. Bake these at 350 for 10-15 min or however long you like your broccoli cooked, I like al dente.
Next, boil your water for the pasta and sauté your ground turkey. Once your roasted squash and broccoli are done, toss them in the cooked ground turkey.
Finally, add your pasta and top with feta, salt, pepper and oregano.
