Stuffed Poblanos

I recently shared my dinner on social media and many asked for the recipe. This took all of 15 min and was so yummy!

  

What you need:

1 poblano per person

1 package of soyrizo

1/2 cup of cooked black beans

1 cup of cooked brown rice

1 tbsp of non-fat Greek yogurt

salsa and cilantro.

Start with cutting the tops off of your poblano and taking the seeds out. Roast the poblanos at 425 for 10-15 min or until they have blistered, turning the peppers ever so often. Next, sauté  your soyrizo, black beans and rice all together. After your peppers are roasted, stuff them with your mixture and serve with your Greek yogurt, salsa and cilantro on top.
