Monday’s have become unbelievably busy for me, thankfully the hubs is off on Monday and is super helpful. Yesterday I asked him to make dinner. I gave him 5 ingredients, acorn squash, uncooked ground turkey and 2 vegetables, his choice. While training my 3:30 client I could smell the delicious aroma of something yummy cooking up in the kitchen.
What you need:
REAL Maple syrup
What he did, he roasted the acorn squash at 425 for 10-15min. Cut them in half, does not matter which way. Scoop the seeds out and place face down. Squash is done when you push on the shell and it caves. Meanwhile, he sautéed the ground turkey, sliced carrots and broccoli in garlic with 1 tbsp of maple syrup. Finish with a pinch of salt and pepper and you are DONE!
Once your squash is cooked, remove the skin and mash onto a plate and place the sauted goodies on top.
