Have a hankering for Italian food but not the extra calories that come along with it?
5 turkey Italian sausages
3 cloves of garlic
1 red bell pepper
5-6 sliced mushrooms
1 cup of cooked greens, I used radicchio and escarole that I’m growing in the yard. Get creative and add any green you like!
1 jar of marinara sauce, least amount of sugar brand
Start with cooking your garlic and onion, cut your sausage and add to the garlic and onion, cook through. Next add your greens, sliced mushrooms and bell pepper. Turn everything to low and start spiralizing your zucchini . Finally add the spiraled zucchini to your mix along with your jar of sauce and cook on low for 10-15 min.
*optional to add a little, 1 tbsp little cheese on top, parmesan, feta or mozzerella.
