Burrito Bowl

 This irresistible burrito bowl will be ready when you come home from work…

   

What you need

Family of 6-8 or to make and have left overs.

2 cups of uncooked brown rice, cooked

1 can of low sodium black beans

4 chicken breasts

2 small cans of green chiles

1 jar of tomatillos 

2 cups of low sodium chicken broth 

1 green bell pepper

1 red bell pepper

1 onion

4 garlic cloves

1 avocado

1 tbsp of Greek yogurt per bowl

Pico de gallo

Cook your brown rice to direction. This is an easy grain that can be cooked ahead of time when you are meal planning on the weekend. 

Start with chopping your garlic and slicing your onion, place in your crock pot. Next add your chicken breast, chicken broth, 2 cans of green chile and your jar of tamotillo sauce. Place on low for 6-8hrs.

Next, slice your peppers and sauté, then open your beans and boil them.

Finally, when you are ready. Scoop 1/2 cup of brown rice into your bowl, next your sautéed peppers, beans, chicken, then add your avocado, greek yogurt and pico.
