This Week in Salads…

Everyone who knows me, knows that I eat alot of damn salads. You may also know that I tell YOU guys to eat alot of salads, and anything can go on top of a pile of greens, a little lemon and BAM, dinner done!

The success to my weight loss journey 8 years ago was a spinach salad with protein, vegetables and lemon juice, EVERY. DAMN. DAY for lunch. My mom would ask me, “don’t you get tired of that?” Not really, it taught me creativity. I used to weigh 145 and now I am at 126. Eating salads daily taught me discipline, nutrition and how to get creative when I got bored. I’m pretty type A if you haven’t caught on.

This week I am going to share with you salads. Last night was a burrito bowl salad and it was YUMMY!

What you need:

Already cooked long grain brown rice

Black beans (we used pintos, they are high in starch so try for some black beans)

Sautéed 2 zucchini, 2 ears of corn, 1/2 red onion

1 avocado

1 diced tomato

Bunch of chopped lettuce
First, sauté your chopped onion, then add your cubed zucchini and finally your corn. Sprinkle with a little s&p and done! Build your bowl by starting with a small amount of brown rice, portion size is the front of your clenched fist. Next, add your beans, same portion size, after that load up on the veggies and finally add your lettuce, diced avocado and tomato. YUMMY!
