This light and easy meal is perfect for summer.
What you need:
1-2 zucchini per person
1 IB ground turkey
1 can of diced tomato
1/4 cup of kalmata olives, chopped or whole
1/2 cup feta cheese
Freshly chopped basil and oregano
Start with cutting your zucchini in half long ways. Then scoop the center out.
Drizzle some olive oil onto the zucchini and bake at 375 until they are al dente. Next, chop your onion and garlic and sauté in your pan with olive oil. Add your ground turkey, once the turkey has been cooked add your diced tomato and olives. Add some fresh or dried oregano, basil, salt and pepper to taste.
