I love love love roasted vegetables! In fact if you can guess my favorite vegtable I’ll give you a FFIT $….
What you will need for this delicious roasted veg. and sausage medley:
French cut green beans
Brussels sprouts, cut in half
1/2 Red onion, cut in long strips
1-2 Bell pepper, cut in long strips
Garlic, chopped
1 can of diced tomato
1 jar or marinara, 1-2 tbsp person
Turkey Italian sausage (1 per person, unless you’re a man and you need to feed the beast)
Feta cheese (optional, I’m a “feta maniac,” said the little Greek man while I was bathing in it in Greece.)
Start your oven at 400. In a cast iron start sauteeing your italian sausage, just to brown the outside. Once they are brown on the outside add your can of diced tomato and slam that into the oven, topped with S&P
On a baking sheet add your brussels sprouts, bell pepper, onion and chopped garlic. Bake until they are all roasted.
On another baking sheet throw out a few hand fulls of the French cut green beans, olive oil, S&P. Bake until those are nice and roasted. Al dente but roasted.
Finally, after everything is roasted to your liking and the sausage is cooked through. Plate with the green beans first, then the roasted veggies, then the sausage and tomatoes. Top with 1-2 tbsp of marinara and for those feta maniacs, add your cheese. Please only use 1 tbsp of feta, don’t get all crazy now.
