For My Mac and Cheese Loving Friends

  
Okay, this is FFIT approved because its waaaaaay better than macaroni and cheese. This is still high on the strachy side but is jammed with flavor, lower in saturated fat and high in nutrients.

What you need:

1/2 cups of uncooked orzo pasta, for a family larger than 3 go for 1 cup of uncooked

2-3 shredded chicken breasts, maybe 4 chicken breast for a larger family

4 cups of raw spinach

2 cups of raw arugula

4 oz of cream cheese

1/3 cup of feta cheese

Start with boiling your pasta, then in a large bowl combine your spinach and arugula, cover and microwave till they are slightly wilted. Next, if it isn’t already shredded, shred your chicken. Once your orzo has cooked, drain the water and add your cheeeses, mix until melted. Finally, add your microwaved spinach and arugula and your shredded chicken.
