This was a HIT and it FULL of yummy macros.
-Roasted butternut squash
*cut squash in 1 inch cubes and roast at 400 for 15-20 minutes, salt and pepper when done
-Black eyed peas
*Cook to the directions on the bag, these can be found in the produce section. I added green beans at the end of the cook time
The other stuff:
-Caramelized turmeric onions
*sauté in a cast iron, 1 white onion, add 1/2tsp of turmeric and cook until caramelized
-Purple pickled cabbage (link can be found on the previous macro bowl post)
-Cooked greens (collard, mustard or turnip)
*wash your greens, add carrots and onion to a pan with olive oil and sautee. Chop your greens and add to the pan with 1/3 cup of vegetable broth, cook until you like them. Add salt and pepper at the end.
