It’s easy to get your hands on some yummy oranges right now, make the most of it and squeeze a fresh dinner out in minutes.
2 garlic cloves
3-4 chicken breasts or 1 chicken breast per adult
1 bag of Brussels sprouts
2 fist fulls of skinny string beans aka haricots verts
8-10 fresh oranges
2 tbsp of braggs
1/4 cup of vegetable broth
1/2 tsp turmeric (really for color)
Start with squeezing your oranges into a big mixing bowl, it sounds like a lot of work but really will take all of 5 minutes. Next, add your broth, then cut your chicken into 1 inch cubes and place into the bowl with the orange juice. Finally, cut your string beans and Brussels sprouts in half.
When you are ready to eat, in a big wok add your garlic and sauté that for a few minutes, then add your entire bowl of the orange chicken and veggies. Finally, toss in the braggs, turmeric, salt and pepper to taste.
If you need the carbs eat this with whole grain short brown rice or if you are decreasing carbs you can rice your cauliflower and eat this on top or just by itself.
