Cool Cucumber Salad

 Let this be the main attraction on your plate for dinner, lunch or a grill and chill kind of day. It’s light, filling and flavorful. Cool down your kitchen with this delicious 5 minute cucumber salad.

What you need: (serves 4 as a side dish or 2 as the main attraction)

Spiralizer (I bought mine from Amazon for $30)

2 large cucumbers

5 medium carrots

3 Green onions

Handful of Sunflower sprouts

Toasted sesame seeds

Roasted unsalted peanuts

1 garlic clove, diced

3 tbsp of Braggs liquid amino acids

1/2 tbsp honey

1 tbsp sesame oil

Juice from half of a lime

Cilantro to taste

In a large bowl combine your diced garlic, braggs, honey, oil, and lime. Then spiralize your cucumbers, shave your carrots, chop your green onion and mix all of these together. Finally, add the sunflower sprouts, sesame seeds, peanuts and cilantro.
