Bulgogi Bowl

Last week I had ground turkey in my fridge and 0 inspiration, then my cousin emailed me a Bulgogi recipe. Bulgogi is a Korean dish that consists of grilled marinated meat. I took this one to a whole new level by adding butternut squash in place of rice. With all of these flavors and colors, I promise this dish is a keeper!

What you need:

1 roasted butternut squash

1/2 chopped purple cabbage

5 shredded carrots

1 package of ground turkey

5 green onions

1 red bell pepper

1 cucumber

3 tbsp of chili garlic sauce

1 tbsp sesame oil

1 tbsp of braggs liquid amino acids

2 tbsp apple cider vinegar

1/2 cup of vegtable broth

Start cooking your cabbage with your 1/2 cup of broth along with 1 tbsp of chili garlic sauce. 

In another sauté pan add your sesame oil, chopped green onions, turkey, 1 tbsp of chili garlic sauce and 1 tbsp of Braggs.

Next, slice your cucumber and put them in a bowl with 1 tbsp chili garlic sauce and 2 tbsp Apple cider vinegar.

Finally, slice your red bell pepper.

Now, it is time to assemble. On the bottom of your bowl mash up 1/4 of that roasted butternut squash, place your meat on top along with your purple cabbage, your shredded carrots, sliced bell pepper and quick marinated cucumbers.
