Thai Coconut Curry Meatballs

These were delicious and super duper easy!

  
What you need:

1 Ib ground turkey

1 tsp curry powder

1/4 tsp ground ginger

1/2 tsp garlic powder

3/4 cup almond flour

1 egg beaten

2 tbsp coconut oil

1 medium yellow onion, chopped

1 red bell pepper, chopped

2 cloves of garlic crushed

2 tbsp of chopped fresh ginger

3 tbsp Thai red curry paste

1 14oz can of coconut milk

Fresh chopped basil, to top

Turn oven to 375, mix the curry powder, ground ginger, garlic powder, almond flour and ground turkey in a bowl. Next add the beaten egg and form into balls. Bake them for 20 min or until cooked through. While those are cooking, in a large skillet add the coconut oil and heat up, then add the chopped onion, bell pepper, garlic and ginger. Cook until the onion is translucent. Add the red Thai curry paste and then all of the coconut milk. Reduce the heat until the curry paste is mixed into the milk. When the meatballs are finished cooking place them in the sauce and allow to simmer a minute or two. Enjoy this on top of brown rice or by themselves. Be sure to add your basil, enjoy!!
