Summer is officially over which means it’s back to sharing some yummy recipes. Just like any working/stay at home/working stay at home mom, it was a busy summer! This summer I made the choice to cut back on a little work to hang with my little dude and the big dude and take in as much fun time together, after all these years will fly by. Now that he’s back at school it’s time to EAT!
Jalapeño Turkey Burger with, yes I said it AN EGG ON TOP!
1 pound of 85% ground turkey (are you shocked that I said 85%? HAHA, since there is not a binder in this recipe and you already have the egg on top, you will need a little more fat to hold it all together.)
1/2-3/4 of a jalapeño pepper, seeds out and minced
1 medium shallot, peeled and minced
Zest and juice of 1 lime
2 tbsp of chopped cilantro
1 tsp paprika
1 tsp of cumin
1 tsp salt
1 tsp black pepper
Egg (1 per person)
Start with combining all ingredients in a bowl except for the guacamole, egg, kale and spinach. Form into patties and place on an olive oiled cookie sheet, bake in the oven at 350. Every oven is different so if the liquid runs clear then they should be cooked.
When the patties are done, start with frying your egg (I use coconut oil) you can fry over easy or poach. Totally up to you, place the burger over your greens, the egg and guacamole on top. Enjoy!
