Spring Roll Bowls

It’s still hot out, wah wah wah! Make this delicious and refreshing dinner and it won’t matter what the blazing temperatures are.

  
What you need:

Spiralizer

3-4 cucumbers cut in half and spiralized

1 red bell pepper thinly sliced

3 shredded carrots

Cilantro

Avocado

Serrano pepper

Peanuts, unsalted

Protein:

Chicken

Shrimp

Tofu (we used tofu, pan fried)

Sauce Ingredients:

3 cloves of garlic, chopped

2 tbsp rice vinegar

1/4 cup of maple syrup

1/4 cup of fish sauce

1/3 cup of lime juice

1/3 cup of olive oil

Mix all of your sauce ingredients and toss your spiralized cucumbers, bell pepper, and carrots. Serve in a bowl and on top add your protein, peanuts, cilantro and Serrano pepper. My tofu was kind of disguised but it’s there. Finally, top with a couple of slices of avocado.

*Prep/Bulk cook the protein ahead, spriralize/shred veggies ahead along with making the dressing. This will ensure a speedy assembly on a busy evening.
