World Series Nachos


Hey, what’s cheese that’s NOT YOUR CHEESE?………NACHO CHEESE! I’m sure you’ve never heard that joke before…

While we are on the subject of nachos, how about those Astros! Nachos seem to be a big ball game food and with Halloween tomorrow this is the perfect meal to watch the game and hand out some candy. These nachos are a game changer, they are delicisuous and as always nutritious. You will be sure to hit a home run with these bad boys on any night of the week!

What you need:

Baby bell peppers (the whole bag)

Meat (lean ground meat/shredded chicken/or turkey/shredded pork)

1 can/ cup of low sodium black beans or if you make them from scratch and freeze, even better!

Cotija cheese

Monterey Jack cheese

Shredded lettuce

Diced tomatoes

Diced red and green onion

Guacamole or avocado sliced

Cilantro

Assuming you’ve already cooked the meat you choose. In our nachos we had carnitas and I’ll share that recipe later. Cut your baby bell peppers in half and place on a cookie sheet that has a little tiny sprinkle of olive oil, place them inside up. 

Then sprinkle your meat, beans and a very small conservative amount of cheese. Bake at 350 until the peppers are some what roasted and cheese has melted.


Then grab your portion and place on your plate and top with all the other goodies.


I know I’m kind of a nutrition nazi BUT I promise even the biggest junk food eater will love this, how can you not. The sweetness of the bell peppers and the saltiness of the meat. YUMO!
Pork Carnitas recipe:

In your pork department you will see they have pre portioned pork carnitas meat NOT the ones that are already flavored, naked meat you want naked meat! Never buy premarinted meat, DIY!!!!

In your crock pot add 1/2 cup of low sodium veggie or chicken broth, add you meat, 1/2 diced white or sweet onion, 5 tomatillos, 2 oranges squeezed and placed in crock pot, pepper, cumin and salt. Place on low for 6-8 hours.
